How To Make The Perfect Hollandaise Sauce

Asparagus can go in countless dishes, but one of our favourites is a classic twist on breakfast: asparagus, poached eggs, and rich, velvety Hollandaise. Hollandaise sauce can be a tricky one to make at times, so we asked Food Operations Manager, Trevor Blake, for his top tips:
- Cook out your egg yolks in a bowl over a pan of barely simmering water, and whisk continuously until pale and thick.
- Remove the bowl from the water as thickening is happening, as the conduction of the heat will keep cooking the egg yolks.
- Add a tablespoon of warm water when finished to stop your sauce from splitting.
Simple, seasonal, and utterly delicious – it won’t be around for long, so enjoy it while it lasts!
