Nothing says British Summertime like long days spent outside in the sun, a fresh glass of Pimm’s in hand, and the sweet taste of English Strawberries.
What better way to celebrate summer’s arrival than with a new menu, made even better with a perfect pud for the season – English Strawberry Trifle with Pimm’s Jelly. Made up of layers of whipped Chantilly Cream, thick custard, Pimm’s jelly, and English strawberries; this dessert is the perfect treat for laid-back afternoons and warm evenings dining alfresco. We’re loving this tasty treat so much, we asked our Chefs if they could share the recipe, so you could make it at home too.

We think you’ll agree that Wimbledon, Pimm’s, and strawberries go hand in hand, so why not combine all three into one afternoon of summer cheer!
INGREDIENTS (Serves 4)
200g Diced Strawberries
300ml Pimm’s Jelly
240ml Thick Custard for Trifle
200ml Chantilly Cream
4g Mint Leaves
8g Meringue Nests
Pimm’s Jelly:
150ml Pimm’s
300ml Lemonade
7g Leaf Gelatine
50g Sliced Cucumber
15ml Lemon Juice
Chantilly Cream:
250ml Whipping Cream
75g Icing Sugar
To Make Your Pimm’s Jelly
METHOD:
- Soak the gelatine leaves in a bowl of cold water until soft.
- Gently warm half the lemonade on a low heat and stir in the gelatine leaves until fully dissolved.
- Remove from heat and add in the rest of the lemonade, Pimm’s, sliced cucumber and lemon juice and leave to infuse for an hour.
- Sieve the mix into a bowl and set to the side.
To Make Your Chantilly Cream
METHOD:
- Add the cream and icing sugar together in a bowl and whisk until soft peaks form.
- Remove the whisk and set to the side.
To Make Your Pimm’s Strawberry Trifle
METHOD:
- Add 30g of the diced strawberries into a glass coupe, add in your Pimm’s jelly mix and set in the fridge.
- Once the jelly has set, pipe the custard on top and then pipe on your Chantilly cream.
- Sprinkle the rest of the diced strawberries, chopped mint and crushed meringue onto the top.
- Serve in a glass coupe.
CHEF’S NOTES:
- We only ever serve The Good Stuff and we’d recommend using locally-sourced and British ingredients where possible.
- For those wanting go alcohol free, you can find Pimm’s non-alcoholic substitutes that work just as well as Pimm’s
- This recipe can be altered to suit your needs – if you prefer more of a crunch, add in a bit more meringue.
