Our pubs are great, but it’s our team that really make us different. All our meat is free-range, our menus are seasonal, and we only serve what we’re happy to eat and drink ourselves. Our kitchens are run by proper Chefs; a highly skilled team of creatives, working with our suppliers to create great tasting dishes. Supporting the pubs, our central foodies help with ongoing training, support and inspiration, meet Clive Dixon, Sam Collins and Trevor Blake.
Clive Dixon – Head of Food
We’re delighted to have Clive Dixon working with Peach. Clive joins us from his Michelin-starred background, and his experience spans several top positions at some of the best places in the country, working with Heston and The Fat Duck Group, Koffman’s and the Waldorf Astoria to name a few. He’s run his own consultancy business since 2011 and joined Peach in 2019– he’s not known for putting his feet up!
Earning his first Michelin star at 23, Clive has continually learnt from all those he’s worked with. He has expert knowledge in menu balance, and has a real understanding of how individual ingredients work.
As a Peach Chef, you’ll enjoy working alongside Clive creating menus and developing cooking techniques as well as improving leadership skills in the kitchen.
Trevor Blake – Chef Operations Manager
Trev is one of our longest-serving Chefs (14 years, and counting), and delivers enthusiasm, energy and passion into everyone he encounters, every single day. After cooking in kitchens all over the Country, and as far afield as Thailand and Australia, he joined Peach way back when, opening The Swan in Salford. Since becoming a partner in Peach in 2015, Trev now supports our Oxfordshire and Warwickshire Pubs as Chef Operations Manager. Together with Suzie Ayling, our Sales and Reservations Manager, and their children, Otis and Delilah, they are one of our much-loved Peach families.
Sam Collins – Chef Operations Manager
Born in London, before growing up in Devon, Sam is a superb Chef, growing up in a family of foodies with an Uncle in the business too. Sam went straight to catering college after finishing school, and his highlights includes working with the inspirational Helena Puolakka at Skylon (D&D London) as her Sous then Head Chef, and Head Chef for Mark Hix. Sam has grown in his role at Peach and enjoys influencing dishes on our menus and working with fantastic people. When he isn’t in the kitchen Sam enjoys spending time with his wife and two kids. He also has a growing collection of trainers, mainly Adidas, but with plenty more thrown in for good measure. Sam’s goal is to keep cooking great food as well as teaching and training others to cook well too
