To launch our new spring menu, we’ve partnered with plant-based chef and author, Gemma Ogston, to bring more bright and beautiful plant-based options to your plate. With a passion for nourishing food that’s as good for the soul as it is for the planet, Gemma’s values align perfectly with ours – thoughtfully sourced ingredients, bold seasonal flavours, and taking care of the people who make it happen.
Healthy Plant-based Living
As part of our spring collaboration, we’re excited to introduce one of Gemma’s famous recipes, her Rainbow Lasagne. Not only does it look and taste delicious, it also helps nourish and energise the body. Gemma’s Rainbow Lasagne bursts with colour, made up of 15 different vegetables from sweet red pepper to butternut squash, and it comes with a tasty cashew béchamel sauce for added protein.

I’ve used as many seasonal plants as possible to create simple food that is balanced with all the right proteins, fats, carbohydrates, vitamins and minerals needed for a healthy body and mind. Community Wellness
Alongside her passion for healthy plant-based dishes, Gemma is a big promoter of community wellness and healthy living. As part of the collaboration, Gemma has provided training to 22 of our chefs on nutrition, hydration, sleep and self-care. Improving the welfare of our team is a priority for Peach and we strive to be a Peachy place to work, learn and grow. Chefs can work long and often stressful shifts in fast-moving, high-pressured environments, with many skipping meals or being too tired to make healthy food choices when they get home.
“Our chefs cook the best food for our guests but probably don’t look after themselves as well as they should at home, so we’ve given them the tools they need to make some changes. That could be through making shift friendly meals or snacks, eating foods that promote deep sleep or cutting back on caffeine and alcohol. It’s important stuff – we really want our people to live their best lives inside and outside of work.”

Get To Know Gemma Ogston…
Brighton-based Gemma Ogston is the founder of Gem’s Wholesome Kitchen, a public health initiative offering workshops and resources to help families on a budget. Gemma is a chef, recipe developer, and writer passionate about plant-based living and community wellness. An ambassador for Fareshare UK and Young Minds UK, Gemma is also the author of two Amazon bestsellers: The Self-Care Cookbook (2019) and The Healing Cookbook (2023), with a third book in in the works.
With a background as an addiction counsellor, Gemma transitioned into the food industry in 2015, first in Barcelona and later in Brighton. She collaborates with brands like Soho House, Farmacy, and Dorset Cereals, regularly appearing on BBC Saturday Kitchen, This Morning, Stylist, Delicious Magazine.

Now that I practice what I preach, I’m in a position to encourage others to make small changes and create mini habits that will improve their wellbeing.
